Ingredients

  • 500 g Onion
  • 1 pack Mushrooms Button
  • 2 pcs Zucchini
  • 200 g Organic Tofu - Soy Paneer
  • 220 g Sunchang Gung Doenjang Korean Soyabean Paste
  • 100 g Garlic
  • 50G Green Chilies

Instructions

  1. 1. Begin by peeling and mincing the garlic, then chop the red onion into medium-sized pieces.
  2. 2. Cut the zucchini and tofu into bite-sized cubes and slice the mushrooms.
  3. 3. In a large pot, heat a tablespoon of sesame oil over medium heat and add the garlic and onion, sautéing until fragrant.
  4. 4. Stir in the mushrooms, zucchini, and seaweed salad, cooking for a few minutes until they begin to soften.
  5. 5. Add 2-3 cups of water to the pot and bring to a gentle boil.
  6. 6. Mix in two heaping tablespoons of doenjang (soybean paste) and stir until it's fully dissolved.
  7. 7. Gently add the cubed tofu to the stew, allowing it to simmer for about 10-15 minutes so all the flavors can meld together.
  8. 8. Taste and adjust seasoning if needed, then serve hot with a bowl of steamed rice.
