Ingredients

  • - Bell Peppers
  • 2 pcs Zucchini
  • 1 Kg Tanifuji Sticky Short Grain Sushi Rice
  • 250 g Carrot
  • 90 g Dark Soy Sauce
  • 500 g Sugar

Instructions

  1. 1. Rinse 1 cup of short-grain rice thoroughly until the water runs clear. Cook the rice in a rice cooker or pot with 2 cups of water until fully cooked. Set aside.
  2. 2. Thinly slice 1 carrot, 1 zucchini, and 1 bell pepper into matchstick-sized pieces.
  3. 3. Heat 1 tbsp of sesame oil in a pan over medium heat. Sauté the sliced carrots for 2-3 minutes until slightly tender. Remove and set aside.
  4. 4. In the same pan, sauté the zucchini slices for 2-3 minutes until tender. Remove and set aside.
  5. 5. Sauté the bell pepper slices for 2-3 minutes until slightly softened. Remove and set aside.
  6. 6. In a small bowl, mix 2 tbsp of soy sauce, 1 tbsp of sesame oil, 1 tsp of sugar, and 1 tsp of minced garlic to make the bibimbap sauce.
  7. 7. Heat 1 tsp of sesame oil in a pan over medium heat. Fry 2 eggs sunny-side up or to your preferred doneness.
  8. 8. In a large serving bowl, place the cooked rice as the base. Arrange the sautéed carrots, zucchini, and bell pepper on top of the rice in separate sections.
  9. 9. Place the fried egg in the center of the bowl.
  10. 10. Drizzle the prepared bibimbap sauce over the top. Serve immediately and mix well before eating.
