Ingredients
- - Bell Peppers
- 2 pcs Zucchini
- 1 Kg Tanifuji Sticky Short Grain Sushi Rice
- 250 g Carrot
- 90 g Dark Soy Sauce
- 500 g Sugar
Instructions
- 1. Rinse 1 cup of short-grain rice thoroughly until the water runs clear. Cook the rice in a rice cooker or pot with 2 cups of water until fully cooked. Set aside.
- 2. Thinly slice 1 carrot, 1 zucchini, and 1 bell pepper into matchstick-sized pieces.
- 3. Heat 1 tbsp of sesame oil in a pan over medium heat. Sauté the sliced carrots for 2-3 minutes until slightly tender. Remove and set aside.
- 4. In the same pan, sauté the zucchini slices for 2-3 minutes until tender. Remove and set aside.
- 5. Sauté the bell pepper slices for 2-3 minutes until slightly softened. Remove and set aside.
- 6. In a small bowl, mix 2 tbsp of soy sauce, 1 tbsp of sesame oil, 1 tsp of sugar, and 1 tsp of minced garlic to make the bibimbap sauce.
- 7. Heat 1 tsp of sesame oil in a pan over medium heat. Fry 2 eggs sunny-side up or to your preferred doneness.
- 8. In a large serving bowl, place the cooked rice as the base. Arrange the sautéed carrots, zucchini, and bell pepper on top of the rice in separate sections.
- 9. Place the fried egg in the center of the bowl.
- 10. Drizzle the prepared bibimbap sauce over the top. Serve immediately and mix well before eating.
