Ingredients

  • 250 g Spinach
  • 450 g Fire Kimchi
  • 1 Kg Tanifuji Sticky Short Grain Sushi Rice
  • 200 g Table Salt
  • 90 g Dark Soy Sauce

Instructions

  1. 1. Rinse 1 cup of short-grain rice under cold water until the water runs clear.
  2. 2. Cook the rinsed rice in a rice cooker or pot with 1.5 cups of water until fully cooked and slightly sticky.
  3. 3. In a small bowl, mix 1 tablespoon of sesame oil, 1 teaspoon of soy sauce, and 1/2 teaspoon of salt.
  4. 4. Transfer the cooked rice to a large mixing bowl and let it cool slightly.
  5. 5. Add the sesame oil mixture to the rice and gently mix until well combined.
  6. 6. Finely chop 1/4 cup of kimchi (ensure it's vegetarian) and 1/4 cup of spinach.
  7. 7. Add the chopped kimchi and spinach to the rice mixture and mix evenly.
  8. 8. Wet your hands with water to prevent sticking, then take a handful of the rice mixture and shape it into a compact ball.
