Ingredients
- 1 kg Basmati Rice
- 250 g Carrot
- 2 pcs Zucchini
- 1 bunch Spring Onion
- 1 kg Bell Peppers
- 200 g Organic Tofu - Soy Paneer
- 500g Gochujang (Korean Chili Paste)
- 200 ml Sesame Oil
- 100 g Garlic
- loose Ginger
- 90 g Dark Soy Sauce
- 500 G Sugar
Instructions
- 1. Press 300g of firm tofu to remove excess moisture. Cut into 1-inch cubes and set aside.
- 2. In a small bowl, mix 2 tbsp gochujang paste, 1 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp rice vinegar, and 1 tsp sugar. Set aside.
- 3. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and fry until golden brown on all sides, about 5-7 minutes. Remove and set aside.
- 4. In the same skillet, add 1 tbsp vegetable oil. Sauté 1 sliced bell pepper, 1 sliced zucchini, and 1 sliced carrot for 3-4 minutes until slightly tender.
- 5. Return the tofu to the skillet and pour the prepared sauce over the tofu and vegetables. Stir well to coat everything evenly.
- 6. Cook for an additional 2-3 minutes until the sauce thickens and clings to the tofu and vegetables.
- 7. Garnish with 1 tbsp toasted sesame seeds and 1 chopped spring onion. Serve hot with steamed rice.
