Ingredients
- 1 piece Yellow Bell Pepper
- 250 g Carrot
- loose Ginger
- 100 g Garlic
- 200 ml Sesame Oil
- 1 bunch Spring Onion
- 50 g White Sesame Seeds
- 500 G Brown Rice
- - Fresh Tofu
- 90 g Dark Soy Sauce
- 100 g Cornflour
Instructions
- 1. Press the tofu for 10 minutes to remove excess water, then cut it into bite-sized cubes.
- 2. In a small bowl, mix soy sauce, sesame oil, rice wine vinegar, grated ginger, garlic, and cornstarch with water to make the sauce.
- 3. Heat a non-stick pan and dry-toast the sesame seeds until golden, then set them aside.
- 4. Add a little sesame oil to the pan and fry the tofu cubes until golden and crisp on all sides, then remove them from the pan.
- 5. In the same pan, stir-fry broccoli, carrots, green beans, and bell pepper for 5 minutes until tender but still crunchy.
- 6. Pour the prepared sauce into the pan and toss the vegetables to coat them evenly, cooking for 2 minutes.
- 7. Add the crispy tofu back into the pan and mix gently to combine with the sauce and vegetables.
- 8. Garnish the stir-fry with toasted sesame seeds and chopped spring onions before serving.
- 9. Serve the stir-fry hot over cooked brown rice for a complete and balanced meal.
