Ingredients

  • 1 piece Yellow Bell Pepper
  • 250 g Carrot
  • loose Ginger
  • 100 g Garlic
  • 200 ml Sesame Oil
  • 1 bunch Spring Onion
  • 50 g White Sesame Seeds
  • 500 G Brown Rice
  • - Fresh Tofu
  • 90 g Dark Soy Sauce
  • 100 g Cornflour

Instructions

  1. 1. Press the tofu for 10 minutes to remove excess water, then cut it into bite-sized cubes.
  2. 2. In a small bowl, mix soy sauce, sesame oil, rice wine vinegar, grated ginger, garlic, and cornstarch with water to make the sauce.
  3. 3. Heat a non-stick pan and dry-toast the sesame seeds until golden, then set them aside.
  4. 4. Add a little sesame oil to the pan and fry the tofu cubes until golden and crisp on all sides, then remove them from the pan.
  5. 5. In the same pan, stir-fry broccoli, carrots, green beans, and bell pepper for 5 minutes until tender but still crunchy.
  6. 6. Pour the prepared sauce into the pan and toss the vegetables to coat them evenly, cooking for 2 minutes.
  7. 7. Add the crispy tofu back into the pan and mix gently to combine with the sauce and vegetables.
  8. 8. Garnish the stir-fry with toasted sesame seeds and chopped spring onions before serving.
  9. 9. Serve the stir-fry hot over cooked brown rice for a complete and balanced meal.
