Ingredients

  • 1 pc (approx. 500 g to 800 g) Cabbage
  • 250 g Spinach
  • 1 bunch Spring Onion
  • 200 g Organic Tofu - Soy Paneer
  • 1 Kg Freshows Edamame Without Pod
  • 300 g Shiro Miso Paste
  • 396Ml Tamari
  • 50 g Asafoetida Powder
  • 500Ml Habit Toasted Sesame Oil Cold Presses
  • 100 g Til
  • 250g Green Chilli
  • 250 ml Lemon Juice Concentrate

Instructions

  1. 1. Cook the -free buckwheat soba noodles according to package instructions. Drain and rinse with cold water to prevent sticking, then set aside.
  2. 2. Press the tofu to remove excess moisture, then cut into bite-sized cubes. In a pan, heat sesame oil over medium heat and pan-fry the tofu until golden and crispy on all sides. Remove and set aside.
  3. 3. In the same pan, add asafoetida and cook for a few seconds to release its aroma. Stir in the miso paste, tamari sauce, and lemon juice. Gradually add water to create a smooth broth, bringing it to a gentle simmer.
  4. 4. Add shelled edamame, shredded cabbage, baby spinach, and green chili to the broth. Cook for 2-3 minutes until the vegetables are tender but still vibrant.
  5. 5. Assemble the bowl by placing the cooked soba noodles at the base, ladling the miso broth and vegetables over it, and topping with crispy tofu.
