Ingredients

  • 300 g Shiro Miso Paste
  • 80 g Soya Sauce
  • 500Ml Habit Toasted Sesame Oil Cold Presses
  • 50 g Honey
  • - Rice Vinegar
  • loose Ginger
  • 300 G Yokoso Soba Noodles
  • 1 liter Sunflower Oil
  • 1 bunch Spring Onion
  • 100 g Til
  • 250 g Cucumber
  • 100 g Coriander Leaves
  • 100 g Salt

Instructions

  1. 1. Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper. In a small bowl, combine miso paste, soy sauce, sesame oil, honey, rice vinegar, and grated ginger to make the glaze.
  2. 2. Place the cod fillets on the prepared baking tray and brush them generously with the miso glaze. Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
  3. 3. While the cod is baking, cook the soba noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process.
  4. 4. In a large skillet, heat vegetable oil over medium heat. Add chili flakes and sliced spring onions, cooking for 1-2 minutes until fragrant. Toss in the cooked soba noodles and stir to coat them evenly with the infused oil. Season with a pinch of salt if needed.
  5. 5. To serve, divide the soba noodles between plates and top each with a miso-glazed cod fillet. Garnish with sesame seeds, julienned cucumber, and fresh coriander. Serve immediately and enjoy your flavorful, protein-packed meal.
