- 250 g Carrot
- 1 pack Mushrooms Button
- 200 g Organic Tofu - Soy Paneer
- 1 bunch Spring Onion
- Pack of 10 Yaki Sushi Nori Seaweed Sheet
- 90 g Dark Soy Sauce
Instructions
- 1. Gather all the ingredients: 4 cups water, 2 tablespoons miso paste, 1 cup tofu (firm, cubed), 1 cup sliced mushrooms, 1/2 cup chopped spring onions, 1/2 cup shredded carrots, 1 sheet nori (seaweed, cut into small pieces), 1 teaspoon sesame oil, and 1 teaspoon soy sauce.
- 2. In a medium-sized pot, heat 1 teaspoon of sesame oil over medium heat.
- 3. Add the sliced mushrooms and sauté for 2-3 minutes until they begin to soften.
- 4. Pour 4 cups of water into the pot and bring it to a gentle boil.
- 5. Reduce the heat to low and add the cubed tofu, shredded carrots, and chopped spring onions to the pot.
- 6. Let the soup simmer for 5 minutes, allowing the vegetables to soften slightly.
- 7. In a small bowl, mix 2 tablespoons of miso paste with a few tablespoons of the hot broth from the pot. Stir until the miso paste is fully dissolved.
- 8. Add the dissolved miso paste back into the pot and stir well to combine.
- 9. Add 1 teaspoon of soy sauce and the nori pieces to the soup, stirring gently.
- 10. Let the soup simmer for another 2-3 minutes, ensuring it does not boil to preserve the flavor of the miso.
- 11. Taste the soup and adjust the seasoning if needed. You can add more miso paste or soy sauce according to your preference.
- 12. Turn off the heat and let the soup sit for a minute before serving.
- 13. Ladle the miso soup into bowls and garnish with additional chopped spring onions or a sprinkle of sesame seeds if desired.
- 14. Serve the miso soup hot, accompanied by steamed rice or as a standalone dish.
