Ingredients

  • 300 g Shiro Miso Paste
  • 250 g Carrot
  • 1 pack Mushrooms Button
  • 200 g Organic Tofu - Soy Paneer
  • 1 bunch Spring Onion
  • Pack of 10 Yaki Sushi Nori Seaweed Sheet
  • 90 g Dark Soy Sauce

Instructions

  1. 1. Gather all the ingredients: 4 cups water, 2 tablespoons miso paste, 1 cup tofu (firm, cubed), 1 cup sliced mushrooms, 1/2 cup chopped spring onions, 1/2 cup shredded carrots, 1 sheet nori (seaweed, cut into small pieces), 1 teaspoon sesame oil, and 1 teaspoon soy sauce.
  2. 2. In a medium-sized pot, heat 1 teaspoon of sesame oil over medium heat.
  3. 3. Add the sliced mushrooms and sauté for 2-3 minutes until they begin to soften.
  4. 4. Pour 4 cups of water into the pot and bring it to a gentle boil.
  5. 5. Reduce the heat to low and add the cubed tofu, shredded carrots, and chopped spring onions to the pot.
  6. 6. Let the soup simmer for 5 minutes, allowing the vegetables to soften slightly.
  7. 7. In a small bowl, mix 2 tablespoons of miso paste with a few tablespoons of the hot broth from the pot. Stir until the miso paste is fully dissolved.
  8. 8. Add the dissolved miso paste back into the pot and stir well to combine.
  9. 9. Add 1 teaspoon of soy sauce and the nori pieces to the soup, stirring gently.
  10. 10. Let the soup simmer for another 2-3 minutes, ensuring it does not boil to preserve the flavor of the miso.
  11. 11. Taste the soup and adjust the seasoning if needed. You can add more miso paste or soy sauce according to your preference.
  12. 12. Turn off the heat and let the soup sit for a minute before serving.
  13. 13. Ladle the miso soup into bowls and garnish with additional chopped spring onions or a sprinkle of sesame seeds if desired.
  14. 14. Serve the miso soup hot, accompanied by steamed rice or as a standalone dish.
