- 500 g Chicken Whole
- 500Ml Gaia Extra Virgin Olive Oil (500ml)
- 60G Primi Piatti Red Chilli Flakes
- 20 g Oregano
- 500 g Tomato - Hybrid
- 100 g Garlic
- 100 g Unsalted Butter
- 52 g Paprika Powder
- 50 g Black Pepper Powder
- 100 g Salt
- 500Ml De Nigris Balsamic Vinegar
Instructions
- 1. In a bowl, combine olive oil, red chili flakes, oregano, basil, paprika, black pepper, and salt to create a marinade. Coat the chicken thighs thoroughly in the marinade and let them rest for 30 minutes to an hour.
- 2. Heat a grill pan over medium heat and grill the marinated chicken thighs for 5-6 minutes on each side, or until fully cooked and slightly charred. Remove and let rest for 5 minutes before slicing.
- 3. In a separate bowl, mix the diced tomatoes, fresh basil, balsamic vinegar, and a pinch of salt. Toss well to make a fresh tomato-basil salad.
- 4. Toast the crusty bread slices on a pan until golden brown. While warm, rub each slice with the cut side of the halved garlic clove, then spread a thin layer of butter on top.
- 5. Arrange the grilled chicken slices on a platter alongside the tomato-basil salad and the garlic bread. Serve immediately for a delightful and satisfying dinner.
