- 100 g Garlic
- 40 g Chilli Flakes - Red

- 500 g Wheat Flour / Maida
- 10G Salt
- 1 Kg Sugarcane (1 Kg)
Instructions
- 1. Start by dissolving 25g of happychef dry yeast and 1 tablespoon of madhur refined sugar in about 250 ml of warm water. Let it sit until frothy, about 5-10 minutes.
- 2. In a large mixing bowl, combine 500g of samrat refined wheat flour with a pinch of salt. Pour in the yeast mixture and 3 tablespoons of figaro olive oil.
- 3. Knead the dough for about 10 minutes on a floured surface until it becomes smooth and elastic. Place the dough in a lightly oiled bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
- 4. Preheat your oven to 220°C (428°F). Punch down the dough gently and transfer it to a baking sheet lined with parchment paper. Press the dough into a flat rectangle about 2 cm thick.
- 5. Create dimples in the surface of the dough using your fingertips. Drizzle 2 more tablespoons of olive oil over the dough, making sure it goes into the dimples.
- 6. Decorate the top of the dough with halved baby cherry tomatoes, thinly sliced onion, chopped garlic (using 100g), coriander leaves (using 100g), and sprinkle with keya red chili flakes (to taste).
- 7. Bake in the preheated oven for about 20-25 minutes until the focaccia is golden brown and the edges are slightly crispy.
- 8. Remove from the oven and let it cool slightly. Slice and serve warm, drizzled with a bit more olive oil if desired.
