A hearty and flavorful vegetarian sauce made with tomatoes, carrots, and parsley, perfect for a quick and satisfying dinner. This sauce is ideal for freezing and reheating for busy weeknights.
Ingredients
- 2.5 Kg Austin Whole Peeled Tomato
- 500 g Carrot
- 100 g Sambar Onion Peeled
- 25 g Parsley
- 5 kg Madhur Sugar M30
- 1 kg Simply Staples Mineral Rich Sea Salt
Instructions
- 1. Chop 4 carrots and 4 onions into small pieces.
- 2. In a large pot, combine 20 tomatoes (chopped), the chopped carrots, and onions. Add 3 tablespoons of sugar and 2 tablespoons of sea salt.
- 3. Bring the mixture slowly to a boil over medium heat, stirring often to prevent sticking.
- 4. Lower the heat and let the mixture simmer for 30 minutes or until it thickens to your desired consistency.
- 5. Remove the pot from heat and let the sauce cool slightly.
- 6. Blend the sauce in batches, about 3 cups at a time, in a blender on high speed for 1 minute until smooth.
- 7. Stir in 1/2 cup of chopped parsley for a fresh, herby finish.
- 8. Pour the sauce into freezer-safe containers, leaving 1 inch of space at the top, and freeze for future use.
