Ingredients
- 25 g Parsley
- 500 ml Bertolli Extra Virgin Olive Oil
- 100 g Sambar Onion Peeled
- 100 g Garlic - Single Clove
- 1 pc (1 L) Sofit Unsweetened Almond Milk Drink
- 100 g Old Hill Parmesan Cheese
- 35 g On1Y Italian Seasoning Mix
- 200 g Organigram Chia Seeds
- 16 g Orika Oregano
- 100 g Baby Spinach
- 1 kg Nutty Yogi Oats Flour (Gluten Free)
Instructions
- 1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
- 2. Heat 2 tablespoons of olive oil in a medium skillet over medium heat.
- 3. Add 1 cup of finely chopped onions and cook, stirring occasionally, until soft and golden, about 5 to 6 minutes.
- 4. Stir in 1 minced clove of garlic and cook for 30 seconds, then remove the skillet from heat.
- 5. Squeeze spinach to remove excess moisture and set aside.
- 6. In a large mixing bowl, whisk together 1/2 cup of unsweetened almond milk and 1/2 cup of chia seeds mixed with 1 1/2 cups of water (let sit for 10 minutes to thicken).
- 7. Stir in the prepared spinach, the onion and garlic mixture, and 1 cup of oats flour. Mix well to combine.
- 8. Add 1 cup of shredded low-fat mozzarella cheese, 1 cup of grated Parmesan cheese, 1/2 cup of chopped fresh parsley, 1/2 teaspoon of mixed Italian seasoning, and 1/4 teaspoon of oregano. Stir until evenly combined.
- 9. Pour the mixture into the prepared baking pan and spread it out evenly.
- 10. Bake in the preheated oven for 40 minutes, or until the top is set and lightly golden.
- 11. Remove the pan from the oven and let it cool on a wire rack for about 10 minutes.
- 12. Cut the baked mixture diagonally into 2 to 3-inch squares or diamonds for serving.
