Ingredients

  • 25 g Parsley
  • 500 ml Bertolli Extra Virgin Olive Oil
  • 100 g Sambar Onion Peeled
  • 100 g Garlic - Single Clove
  • 1 pc (1 L) Sofit Unsweetened Almond Milk Drink
  • 100 g Old Hill Parmesan Cheese
  • 35 g On1Y Italian Seasoning Mix
  • 200 g Organigram Chia Seeds
  • 16 g Orika Oregano
  • 100 g Baby Spinach
  • 1 kg Nutty Yogi Oats Flour (Gluten Free)

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. 2. Heat 2 tablespoons of olive oil in a medium skillet over medium heat.
  3. 3. Add 1 cup of finely chopped onions and cook, stirring occasionally, until soft and golden, about 5 to 6 minutes.
  4. 4. Stir in 1 minced clove of garlic and cook for 30 seconds, then remove the skillet from heat.
  5. 5. Squeeze spinach to remove excess moisture and set aside.
  6. 6. In a large mixing bowl, whisk together 1/2 cup of unsweetened almond milk and 1/2 cup of chia seeds mixed with 1 1/2 cups of water (let sit for 10 minutes to thicken).
  7. 7. Stir in the prepared spinach, the onion and garlic mixture, and 1 cup of oats flour. Mix well to combine.
  8. 8. Add 1 cup of shredded low-fat mozzarella cheese, 1 cup of grated Parmesan cheese, 1/2 cup of chopped fresh parsley, 1/2 teaspoon of mixed Italian seasoning, and 1/4 teaspoon of oregano. Stir until evenly combined.
  9. 9. Pour the mixture into the prepared baking pan and spread it out evenly.
  10. 10. Bake in the preheated oven for 40 minutes, or until the top is set and lightly golden.
