Ingredients

  • 50 g The Select Aisle Bread Crumbs
  • 100 g Sambar Onion Peeled
  • 500 ml Oleev Extra Light Olive Oil
  • 100 g Garlic
  • 250 g Small-Purple Brinjal (Baingan)
  • 10 g Thyme
  • 100 g Pasteurised Butter
  • 50 g On1Y Onion Powder

Instructions

  1. 1. Cut the top off the eggplant, wash it, and prick it with a fork to allow steam to escape.
  2. 2. Place the eggplant in the microwave and cook on high for 5 minutes to soften. Let it cool until safe to handle.
  3. 3. Cut the eggplant lengthwise down the middle and scoop out the seeds and pulp, leaving a sturdy shell.
  4. 4. In a mixing bowl, combine 1 cup of bread crumbs, 1 finely chopped onion, 1 beaten egg, 1/2 teaspoon of dried sage, 1/2 teaspoon of minced garlic, and 1/4 teaspoon of dried thyme. Mix well to form the stuffing.
  5. 5. Divide the stuffing mixture evenly and fill the two eggplant halves.
  6. 6. Brush the tops of the stuffed eggplants with a beaten egg and coat them with additional bread crumbs for a crispy finish.
