- 5 kg Whole Farm Grocery Sugar (5 Kg)
- 1 kg Simply Staples Mineral Rich Sea Salt
Instructions
- 1. Heat 2 cups of vegetable oil in a large pot over medium heat.
- 2. Add 3 lbs of chopped onions, 4 diced sweet green peppers, and 2 finely chopped jalapenos to the pot. Cook for 30 minutes, stirring occasionally, until softened.
- 3. Add 6 minced garlic cloves and cook for an additional 5 minutes, stirring to combine.
- 4. Transfer the cooked mixture to a blender and blend until smooth. Set aside.
- 5. Use 10 lbs of tomato puree. Blend the tomatoes in batches until liquified.
- 6. Return the blended onion and pepper mixture to the pot. Add the liquified tomato puree, 1 1/2 cups of sugar, 1/2 cup of sea salt, 1 tsp of dried oregano, and 1/4 cup of dried oregano. Stir well to combine.
- 7. Bring the mixture to a boil over medium-high heat, then reduce to a simmer. Cook uncovered, stirring occasionally, until the sauce reaches your desired consistency, about 1-2 hours.
- 8. For added flavor and body, stir in one large can of tomato paste and mix thoroughly.
- 9. Once the sauce is ready, ladle it into hot, sterile jars for canning or allow it to cool and store in freezer-safe containers.
- 10. Use this sauce as a base for pasta dishes, casseroles, or any recipe calling for a rich tomato sauce.
