Ingredients
- 25 g Parsley
- 6 pcs Licious Brown Eggs
- 1 ltr Mother Dairy Toned Milk
- 1 pc (50 g) On1Y Pepper Grinder
- 250 g Zucchini Green
- 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
- 100 g Old Hill Parmesan Cheese
- 1 kg Twf Bread Flour T55 - Specialised Maida
Instructions
- 1. In a mixing bowl, whisk together 2 eggs, 1/4 cup milk, 2 tablespoons flour, 1/4 teaspoon pepper, and 2 tablespoons finely chopped parsley until smooth. Cover and refrigerate for at least 15 minutes.
- 2. Wash and trim 2 zucchinis. Cut them in half crosswise, then slice each half lengthwise into pieces about 1/4 inch thick.
- 3. Lightly dust the zucchini slices with 2 tablespoons flour to ensure the batter adheres well.
- 4. Heat 1/4 cup oil in a large frying pan over medium-high heat until shimmering.
- 5. Dip each zucchini slice into the prepared batter, ensuring both sides are evenly coated.
- 6. Fry the battered zucchini slices in the hot oil, cooking until golden brown on both sides, about 2-3 minutes per side. Work in batches if necessary to avoid overcrowding the pan.
- 7. Remove the fried zucchini slices and drain them on paper towels to remove excess oil.
- 8. Sprinkle the hot fritters with 3/4 cup grated Parmesan cheese for added flavor, if desired, and serve immediately.
