Ingredients

  • 25 g Parsley
  • 6 pcs Licious Brown Eggs
  • 1 ltr Mother Dairy Toned Milk
  • 1 pc (50 g) On1Y Pepper Grinder
  • 250 g Zucchini Green
  • 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
  • 100 g Old Hill Parmesan Cheese
  • 1 kg Twf Bread Flour T55 - Specialised Maida

Instructions

  1. 1. In a mixing bowl, whisk together 2 eggs, 1/4 cup milk, 2 tablespoons flour, 1/4 teaspoon pepper, and 2 tablespoons finely chopped parsley until smooth. Cover and refrigerate for at least 15 minutes.
  2. 2. Wash and trim 2 zucchinis. Cut them in half crosswise, then slice each half lengthwise into pieces about 1/4 inch thick.
  3. 3. Lightly dust the zucchini slices with 2 tablespoons flour to ensure the batter adheres well.
  4. 4. Heat 1/4 cup oil in a large frying pan over medium-high heat until shimmering.
  5. 5. Dip each zucchini slice into the prepared batter, ensuring both sides are evenly coated.
  6. 6. Fry the battered zucchini slices in the hot oil, cooking until golden brown on both sides, about 2-3 minutes per side. Work in batches if necessary to avoid overcrowding the pan.
  7. 7. Remove the fried zucchini slices and drain them on paper towels to remove excess oil.
  8. 8. Sprinkle the hot fritters with 3/4 cup grated Parmesan cheese for added flavor, if desired, and serve immediately.
