Ingredients
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 500 g Rice
- 500 g Onion
- 500 gm Eggplant
- 500 G Peas/Matar (500Gm)
- - Red Chilli Powder
- 200 g Table Salt
- 100 g Yellow Mustard Seeds
- 20 g Turmeric Powder
- 500 Ml Champion Oil
Instructions
- 1. Wash and chop the eggplant into small cubes.
- 2. Heat oil in a pan and add mustard seeds. Let them splutter.
- 3. Add curry leaves, chopped onions, and sauté until onions turn translucent.
- 4. Add chopped eggplant, turmeric powder, red chili powder, and salt. Mix well.
- 5. Cover and cook on medium heat until the eggplant becomes tender.
- 6. Add cooked rice to the pan and mix gently to combine all ingredients.
- 7. Add vangi bhaat masala and mix well. Cook for 2-3 minutes.
- 8. Garnish with fresh coriander leaves and serve hot.
