Ingredients

  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 500 g Rice
  • 500 g Onion
  • 500 gm Eggplant
  • 500 G Peas/Matar (500Gm)
  • - Red Chilli Powder
  • 200 g Table Salt
  • 100 g Yellow Mustard Seeds
  • 20 g Turmeric Powder
  • 500 Ml Champion Oil

Instructions

  1. 1. Wash and chop the eggplant into small cubes.
  2. 2. Heat oil in a pan and add mustard seeds. Let them splutter.
  3. 3. Add curry leaves, chopped onions, and sauté until onions turn translucent.
  4. 4. Add chopped eggplant, turmeric powder, red chili powder, and salt. Mix well.
  5. 5. Cover and cook on medium heat until the eggplant becomes tender.
  6. 6. Add cooked rice to the pan and mix gently to combine all ingredients.
  7. 7. Add vangi bhaat masala and mix well. Cook for 2-3 minutes.
  8. 8. Garnish with fresh coriander leaves and serve hot.
