Ingredients

  • 100 g Coriander Leaves
  • 100 g Garlic
  • medium Chilli Green Long
  • 1 kg Potato
  • - Besan
  • - Green Chutney
  • 200 g Tamarind Date Chutney
  • - Pav
  • loose Ginger
  • 50G Green Chilies
  • 1 kg Chilli Green
  • 1 box Baking Soda
  • 250g Green Chilli
  • 200 g Table Salt
  • 50g Everest Garam Masala
  • 100 g Yellow Mustard Seeds
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 500 Ml Champion Oil

Instructions

  1. 1. Boil 3 medium potatoes until tender. Peel and mash them in a bowl.
  2. 2. Heat 1 tbsp oil in a pan. Add 1/2 tsp mustard seeds and let them splutter. Add 1/4 tsp turmeric, 1/2 tsp red chili powder, 1/2 tsp garam masala, and 1/2 tsp salt. Sauté for a few seconds.
  3. 3. Add 1 finely chopped green chili and 2 finely chopped garlic cloves. Sauté for a minute.
  4. 4. Mix the mashed potatoes into the pan and combine well. Remove from heat and let the mixture cool.
  5. 5. In a separate bowl, mix 1/2 cup besan (gram flour), 1/4 tsp turmeric, 1/4 tsp red chili powder, and a pinch of salt. Add water gradually to make a thick batter.
  6. 6. Divide the potato mixture into 6 equal portions and shape them into balls. Flatten slightly to form patties.
  7. 7. Heat oil in a deep pan for frying. Dip each potato patty into the besan batter, ensuring it is fully coated, and fry until golden brown. Drain on paper towels.
  8. 8. Slice 6 pav (bread rolls) horizontally, but not all the way through. Spread green chutney on one side and tamarind chutney on the other.
  9. 9. Place a fried vada (potato patty) inside each pav. Serve hot with fried green chilies and more chutney on the side.
