Ingredients
- 100 g Cooking Soda
- 1 piece Banana
- 500 g Jaggery
- 100 Ml Govind Ghee
- 500G Rice Flour
- 500 g Wheat Flour / Maida
- - Green Cardamom Powder
- 100 G Coconut Powder
Instructions
- 1. In a mixing bowl, combine 1 cup of rice flour, 1/2 cup of wheat flour, and 1/2 cup of jaggery syrup. Mix well until the jaggery is fully incorporated.
- 2. Add 1/4 tsp of cardamom powder and 1/4 tsp of baking soda to the mixture. Stir until evenly combined.
- 3. Add 1/4 cup of mashed ripe banana and 1/4 cup of grated coconut to the batter. Mix thoroughly to form a smooth and slightly thick batter.
- 4. Let the batter rest for 20-30 minutes to allow the flavors to meld together.
- 5. Heat an unniyappam pan (or appe pan) on medium flame and add a small amount of ghee to each cavity.
- 6. Pour a small ladleful of batter into each cavity, filling them about 3/4 full.
- 7. Cook on medium heat until the edges turn golden brown and the unniyappams puff up. Flip them gently using a skewer or spoon and cook the other side until golden.
- 8. Remove the unniyappams from the pan and place them on a plate lined with paper towels to absorb any excess ghee. Serve warm.
