- 100 g Coriander Leaves

- - Green Chutney
- 1 kg Beetroot
- 250 g Spinach
- 200 g Table Salt
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli Powder

- 1. In a mixing bowl, combine 1 cup whole wheat flour, 1/4 tsp turmeric powder, 1/4 tsp red chili powder, and 1/2 tsp salt. Gradually add water and knead into a smooth dough. Cover and set aside for 20 minutes.
- 2. In a separate bowl, combine 1 cup whole wheat flour, 1/4 tsp spinach puree, and 1/2 tsp salt. Gradually add water and knead into a smooth dough. Cover and set aside for 20 minutes.
- 3. In another bowl, combine 1 cup whole wheat flour, 1/4 tsp beetroot puree, and 1/2 tsp salt. Gradually add water and knead into a smooth dough. Cover and set aside for 20 minutes.
- 4. Divide each dough into equal portions and roll into small balls. Take one ball of each color, press them together, and roll into a flat, round paratha.
- 5. Heat a tawa or griddle on medium flame. Cook the paratha on both sides, applying 1/2 tsp ghee or oil, until golden brown and cooked through.
- 6. In a pan, heat 1 tbsp oil. Add 1/2 tsp cumin seeds, 1/4 tsp turmeric powder, and 1/2 tsp red chili powder. Sauté for 30 seconds.
- 7. Add 1/2 cup finely chopped capsicum, 1/2 cup grated paneer, and 1/2 tsp garam masala. Cook for 2-3 minutes. Add 1/4 cup chopped coriander and mix well.
- 8. Spread a layer of green chutney on each paratha. Place the cooked vegetable mixture in the center, roll tightly, and secure with foil or parchment paper.
