Ingredients

  • 100 g Coriander Leaves
  • 250 g Carrot
  • - Besan
  • 500 g Curd
  • Pcs Eno Regular
  • 1 l Refined Soyabean Oil
  • 200 g Table Salt
  • 300 g Ginger Paste
  • 20 g Turmeric Powder
  • 500G Madhur Sugar

Instructions

  1. 1. Grease a 7-inch round or square cake tin with oil and set aside.
  2. 2. In a mixing bowl, combine 1 cup besan (gram flour), 1/4 tsp turmeric powder, 1/2 tsp salt, 1/2 tsp sugar, 1/2 tsp ginger paste, 1/2 tsp green chili paste, and 1/2 cup water. Mix well to form a smooth batter.
  3. 3. Add 1/2 tsp fruit salt (eno) to the batter and mix gently. The batter will become frothy.
  4. 4. Pour the batter into the greased tin and steam for 10-12 minutes on medium heat. Check with a toothpick; if it comes out clean, the dhokla is ready.
  5. 5. Let the dhokla cool slightly, then cut it into three equal horizontal layers.
  6. 6. For the white layer, mix 1/2 cup hung curd, 1/4 tsp salt, and 1/4 tsp sugar. Spread this evenly on the bottom layer of dhokla.
  7. 7. For the green layer, blend 1/2 cup coriander leaves, 1/4 tsp salt, and 1/4 tsp sugar to make a paste. Spread this on the middle layer of dhokla.
  8. 8. For the orange layer, mix 1/2 cup grated carrot, 1/4 tsp salt, and 1/4 tsp sugar. Spread this on the top layer of dhokla.
  9. 9. Stack the layers back together to form the Tiranga Dhokla. Garnish with chopped coriander and serve with green chutney.
