Ingredients
- 1 liter Sunflower Oil
- 500 g Onion
- - Frozen Peas
- 250 g Carrot
- 100 g Tamarind Paste
- - Red Chilli Powder
- 50g Everest Garam Masala
- 100 g Salt
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Cut the idlis into quarters and set aside to prepare them for sautéing.
- 2. Heat oil in a pan over medium heat and add mustard seeds. Once they start spluttering, add curry leaves and sauté for 30 seconds.
- 3. Add the chopped onions and sauté until golden brown, followed by the tomatoes. Cook until the tomatoes soften and blend well with the onions.
- 4. Mix in the peas and grated carrots, cooking for 3-4 minutes until the vegetables are tender.
- 5. Add turmeric powder, red chili powder, garam masala, and salt. Stir well to combine, ensuring the spices coat the vegetables evenly.
- 6. Add tamarind paste and a splash of water to create a tangy masala sauce. Cook for 2-3 minutes until the sauce thickens slightly.
- 7. Gently toss the idli pieces in the masala sauce, ensuring they are evenly coated. Cook on low heat for 3-4 minutes to allow the flavors to meld.
- 8. Garnish with chopped coriander leaves and serve hot, enjoying the tangy, mildly spiced idli delight.
