Ingredients
- 100 g Curry Leaves
- 1kg Swad Adatt Plus Matta Rice With 50% Bran, 1 Kg Pouch
- 100 g Tamarind Paste
- 100G Peanuts
- 50 g Asafoetida Powder
- 100 g Yellow Mustard Seeds
- 20 g Turmeric Powder
- 100 g Jeera
- 100 g Gul Powder
Instructions
- 1. Cook 1 cup of rice with 2 cups of water until it is fluffy and grains are separate. Spread the rice on a plate to cool completely.
- 2. Soak a small lemon-sized ball of tamarind in 1/4 cup of warm water for 10 minutes. Extract the pulp and set aside.
- 3. Heat 2 tbsp of sesame oil in a pan. Add 1/2 tsp mustard seeds and let them splutter.
- 4. Add 1/2 tsp cumin seeds, 2 dried red chilies, 1/4 tsp asafoetida, and 8-10 curry leaves. Sauté for a few seconds.
- 5. Add 2 tbsp of roasted peanuts and stir-fry until they are golden and crunchy.
- 6. Pour in the tamarind pulp and add 1/4 tsp turmeric powder, 1 tsp jaggery, and salt to taste. Let the mixture cook on low flame for 5-6 minutes until it thickens slightly.
- 7. Add the cooled rice to the pan and gently mix until the tamarind mixture coats the rice evenly. Cook for another 2 minutes on low flame.
- 8. Garnish with 1 tbsp of fresh coriander leaves and serve warm.
