Ingredients

  • 500 Grms Bajra Atta Millets Atta 500 Grms
  • 500g Good Life Raw Peanuts 500 G
  • 200 ml Mustard Oil
  • 500 g Onion
  • loose Ginger
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 100 g Jeera
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Dry roast the foxtail millet in a pan over medium heat for 2-3 minutes until aromatic, then set aside.
  2. 2. Heat oil in a large pan and add mustard seeds; when they splutter, add cumin seeds, curry leaves, and green chilies.
  3. 3. Add the peanuts and sauté for 1-2 minutes until golden and crunchy.
  4. 4. Stir in the chopped onions and grated ginger, cooking until the onions turn translucent.
  5. 5. Add the mixed vegetables, turmeric powder, red chili powder, and salt, then sauté for 3-4 minutes until the vegetables soften slightly.
  6. 6. Pour 2 cups of water and bring it to a gentle boil, then add the roasted millet and stir well.
  7. 7. Lower the heat, cover the pan, and let the millet cook for 12-15 minutes until it absorbs the water and becomes fluffy.
  8. 8. Turn off the heat, add lemon juice and chopped coriander leaves, and gently fluff the upma with a fork.
