  • 500 g Onion
  • 250 g Carrot
  • 100 g Salt
  • 100 g Lemon
  • 100 g Coriander Leaves
  • 500 g Suji
  • 500 g Capsicum Green
  • medium Chilli Green Long
  • 100 g Curry Leaves
  • - Green Peas
  • 100 g Jeera
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Dry roast the semolina in a pan on medium heat for 5-6 minutes, stirring continuously until it is lightly golden and aromatic. Set aside to cool.
  2. 2. Heat ghee or oil in a tawa or large skillet over medium heat. Add mustard seeds and let them crackle, then add cumin seeds, curry leaves, and chopped green chili. Sauté for 30 seconds.
  3. 3. Add the chopped onion and sauté until they turn translucent, about 2-3 minutes. Stir in the turmeric powder.
  4. 4. Add the chopped carrot, green peas, and bell peppers to the pan. Sauté the vegetables for 3-4 minutes until slightly tender but still crisp.
  5. 5. Add 2 cups of hot water to the pan and bring it to a gentle boil. Stir in the salt and gradually add the roasted semolina, stirring continuously to avoid lumps.
  6. 6. Lower the heat and cook the mixture for 4-5 minutes, stirring occasionally, until the semolina absorbs all the water and becomes soft and fluffy.
  7. 7. Turn off the heat and stir in the lemon juice. Garnish with chopped coriander leaves and mix gently.
