Ingredients

  • 500 Grms Bajra Atta Millets Atta 500 Grms
  • 200 ml Ghee
  • 250 g Carrot
  • medium Chilli Green Long
  • 50 g Asafoetida Powder
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 250 g French Beans
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 1 kg Yellow Moong Dal

Instructions

  1. 1. Rinse the foxtail millet and yellow moong dal thoroughly under running water and soak them for 20 minutes.
  2. 2. Heat ghee in a pressure cooker on medium heat. Add cumin seeds and asafoetida, letting them sizzle for 30 seconds.
  3. 3. Add chopped carrots, green beans, and slit green chili to the cooker. Sauté for 2-3 minutes until slightly softened.
  4. 4. Stir in turmeric powder, coriander powder, and red chili powder, mixing well with the vegetables.
  5. 5. Drain the soaked millet and dal, and add them to the cooker along with salt. Mix everything together for 1-2 minutes.
  6. 6. Add enough water to cover the ingredients (approximately 2 cups) and close the lid of the pressure cooker.
  7. 7. Cook on medium heat for 3 whistles or until the millet and dal are soft and well-cooked.
  8. 8. Allow the pressure to release naturally, then open the lid and stir the khichdi gently to achieve a creamy texture.
  9. 9. Garnish with freshly chopped coriander and serve hot.
