Ingredients

  • 100 g Curry Leaves
  • loose Ginger
  • 500 g Tomato - Hybrid
  • medium Chilli Green Long
  • 150 g Ratlami Sev
  • 35Ml Shubh Cow Ghee 35ml
  • 250g Coriander
  • 500 g Jaggery Powder
  • 50 g Asafoetida Powder
  • 100 g Red Mustard Seeds
  • 10G Salt
  • 20 g Turmeric Powder
  • - Coriander Powder
  • - Cumin Seed

Instructions

  1. 1. Heat a pan on medium flame and add 2 tablespoons of ghee.
  2. 2. Once the ghee is hot, add 1 teaspoon of red mustard seeds and allow them to splutter.
  3. 3. Add a pinch of asafoetida powder, followed by a few curry leaves and a green long chilli slit in half.
  4. 4. Add 1 teaspoon of finely chopped ginger and sauté until the raw aroma disappears.
  5. 5. Add 3 cups of chopped tomatoes to the pan and stir well.
  6. 6. Sprinkle 1 teaspoon of turmeric powder and mix to combine.
  7. 7. Add salt to taste and mix well.
  8. 8. Cover the pan and let the tomatoes cook for about 10-12 minutes or until they are soft and mushy.
  9. 9. Add 1 tablespoon of jaggery powder to balance the tartness of the tomatoes and mix well. Cook for another 2-3 minutes.
  10. 10. Turn off the heat and transfer the tomato mixture to a serving bowl.
  11. 11. Just before serving, top the tomato mixture with sev for a crunchy texture.
