- 1 l Homogenised Toned Milk
- 190 ml White Cooking Vinegar
- 20 g Cardamom Powder
- 100 g Cornflour
- 500 g Sugar
- Pcs Saffron
Instructions
- 1. Boil the milk: In a large pot, bring the toned milk to a gentle boil over medium heat, stirring occasionally to prevent scorching.
- 2. Curdle the milk: Once the milk reaches a boil, reduce the heat to low and gradually add the white cooking vinegar while stirring continuously. Continue until the milk curdles and separates into whey and curds.
- 3. Strain and rinse the paneer: Line a strainer with a muslin cloth and pour the curdled milk through it to separate the paneer (curds) from the whey. Rinse the paneer under cold water to remove any vinegar smell, then squeeze out excess water and hang it in the muslin cloth for about 30 minutes to drain completely.
- 4. Knead the paneer: Transfer the drained paneer to a clean bowl and knead it thoroughly with a small amount of cornflour until the mixture becomes smooth and creamy.
- 5. Cook the mixture: Place the kneaded paneer in a non-stick pan and add sugar to taste. Cook the mixture on low heat, stirring continuously, until it thickens and forms a soft dough-like consistency.
- 6. Add flavor: Remove the pan from heat and mix in cardamom powder and saffron soaked in a tablespoon of warm milk. Ensure the flavors are evenly incorporated.
