Ingredients

  • 200 g Roasted Chana Dal
  • 200 ml Ghee
  • 500 g Jaggery Powder
  • Loose Cardamom
  • 500 g Wheat Flour / Maida
  • 200 g Table Salt

Instructions

  1. 1. Rinse the roasted chana dal and soak it in water for about 30 minutes.
  2. 2. Drain the dal and cook it in a pressure cooker with enough water until it's soft and fully cooked. This should take about 3-4 whistles.
  3. 3. Once the dal is cooked, mash it to make a smooth paste using a spoon or a masher.
  4. 4. In a pan, mix the mashed dal with jaggery powder and cook on a low flame until the mixture thickens. Stir continuously to avoid burning.
  5. 5. Add cardamom powder to the mixture, stir well, and set it aside to cool. This is your 'puran' or stuffing.
  6. 6. In a mixing bowl, combine wheat flour, a pinch of salt, and enough water to make a soft dough. Add a tablespoon of ghee while kneading to make the dough soft and pliable.
  7. 7. Divide the dough and puran mixture into equal-sized portions. Roll the dough into small balls.
  8. 8. Flatten each dough ball with your fingers, place a portion of the puran mixture in the center, and bring the edges together to enclose the filling.
  9. 9. Gently roll out the filled dough balls into thin circles, being careful not to let the filling come out.
  10. 10. Heat a tawa or a skillet, and cook the rolled-out puran poli on medium heat until golden brown on both sides. Apply ghee while cooking for added flavor.
