Ingredients

  • 500 g Onion
  • - Bell Peppers
  • medium Chilli Green Long
  • - Mint Leaf
  • 200 g Paneer
  • 500 g Curd
  • 100 g Lemon
  • 200 g Table Salt
  • 50 g Cumin Powder
  • 50g Everest Garam Masala
  • 20 g Turmeric Powder
  • - Red Chilli Powder

Instructions

  1. 1. Preheat the oven to 200°C (392°F). Soak 6 wooden skewers in water for 30 minutes to prevent burning.
  2. 2. In a mixing bowl, combine 1 cup thick yogurt, 1/2 tsp turmeric, 1 tsp red chili powder, 1 tsp garam masala, 1/2 tsp cumin powder, 1/2 tsp coriander powder, 1/2 tsp chaat masala, 1 tbsp lemon juice, and salt to taste. Mix well.
  3. 3. Add 200g paneer cubes, 1/2 cup cubed bell peppers, and 1/2 cup cubed onions to the marinade. Toss gently to coat evenly. Let it marinate for 30 minutes.
  4. 4. Thread the marinated paneer, bell peppers, and onions onto the soaked skewers.
  5. 5. Place the skewers on a baking tray lined with parchment paper. Bake in the preheated oven for 15-20 minutes, flipping halfway through, until slightly charred.
  6. 6. While the skewers bake, prepare the mint drizzle: blend 1/2 cup fresh mint leaves, 1/4 cup coriander leaves, 1 green chili, 1 tbsp lemon juice, 1/2 tsp sugar, and salt to taste with 2 tbsp water until smooth.
  7. 7. Once the skewers are done, drizzle the mint sauce over them and serve hot.
