Ingredients
- 100 g Curry Leaves
- - Grated Coconut
- 500 g Curd
- 800 g - 1000 g Pineapple
- 500g Beetroot
- 200 g Table Salt
- 100 g Red Mustard Seeds
- 500 g Sugar
- 100 g Jeera
- 500 Ml Champion Oil
Instructions
- 1. Peel and finely chop 1 cup of pineapple into small pieces.
- 2. In a pan, add the chopped pineapple, 1/2 cup of water, and 2 tbsp of sugar. Cook on medium heat until the pineapple becomes soft and the water reduces slightly, about 5-7 minutes.
- 3. Grind 1/4 cup of grated coconut, 1-2 green chilies, and 1/2 tsp cumin seeds into a smooth paste using 2-3 tbsp of water.
- 4. Add the coconut paste to the cooked pineapple and mix well. Cook for another 2 minutes on low heat, stirring continuously.
- 5. Remove the pan from heat and let it cool slightly. Once cooled, add 1/2 cup of whisked plain yogurt and mix thoroughly. Adjust salt as needed.
- 6. For tempering, heat 1 tsp coconut oil in a small pan. Add 1/2 tsp mustard seeds, 1-2 dried red chilies, and 6-8 curry leaves. Allow the mustard seeds to splutter.
- 7. Pour the tempering over the pachadi and mix gently. Serve as a side dish with steamed rice or any Indian meal.
