  • 50G Green Chilies
  • 1 l Refined Soyabean Oil
  • 200 g Table Salt

Instructions

  1. 1. Rinse 1/2 cup of cowpeas (red or black-eyed beans) and soak them in water for 6-8 hours. Drain and pressure cook with 1 1/2 cups of water and a pinch of salt for 4-5 whistles until soft. Set aside.
  2. 2. Rinse and peel 100g of ash gourd and 100g of pumpkin. Cut them into small cubes of approximately 1-inch size.
  3. 3. In a pot, add the cubed ash gourd and pumpkin. Pour in 1 cup of water and 1/4 tsp of salt. Cover and cook on medium heat for 10-12 minutes, or until the vegetables are tender but not mushy.
  4. 4. Once the vegetables are cooked, add the boiled cowpeas to the pot. Mix gently and simmer for 2-3 minutes to combine the flavors.
  5. 5. Add 1/2 cup of thick coconut milk and stir carefully. Cook on low flame for 2-3 minutes, ensuring the coconut milk does not boil. Adjust salt as needed.
