Ingredients

  • - Besan
  • 100 Ml Gowardhan Ghee
  • 500 g Sugar
  • Loose Cardamom
  • 500G Maida (Refined Flour)

Instructions

  1. 1. Gather all the ingredients: 1 cup besan (gram flour), 1/2 cup ghee (clarified butter), 1/2 cup sugar, 1/4 cup water, 1/4 tsp cardamom powder, and a few strands of saffron (optional).
  2. 2. Heat the ghee in a deep pan or kadhai over medium heat until it melts completely.
  3. 3. Gradually add the besan to the melted ghee, stirring continuously to avoid lumps.
  4. 4. Roast the besan in the ghee on low to medium heat, stirring constantly, until it turns golden brown and releases a nutty aroma. This should take about 10-12 minutes.
  5. 5. Once the besan is roasted, remove it from the heat and let it cool completely.
  6. 6. In a separate pan, prepare the sugar syrup by combining sugar and water. Heat the mixture over medium heat, stirring until the sugar dissolves completely.
  7. 7. Continue to cook the sugar syrup until it reaches a one-string consistency. To test, take a small amount of syrup between your fingers and pull them apart; a single thread should form.
  8. 8. Add the cardamom powder and saffron strands (if using) to the sugar syrup and mix well.
  9. 9. Gradually add the roasted besan to the sugar syrup, stirring continuously to ensure it mixes evenly and forms a smooth dough-like consistency.
  10. 10. Allow the mixture to cool slightly until it is safe to handle with your hands.
  11. 11. Grease your palms with a little ghee to prevent sticking, then take small portions of the mixture and shape them into round ladoos (balls).
  12. 12. Place the shaped ladoos on a plate or tray and let them set for about 15-20 minutes.
  13. 13. Once the ladoos have set, they are ready to be served. Store any leftovers in an airtight container to maintain freshness.
