Ingredients
- 500 g Tomato - Hybrid
- 1kg Swad Adatt Plus Matta Rice With 50% Bran, 1 Kg Pouch
- 1 l Refined Soyabean Oil
- 200 g Table Salt
- 50 g Asafoetida Powder
- 100 g Coriander Powder
- 20 g Turmeric Powder
- - Red Chilli Powder
- 100 g Jeera
Instructions
- 1. Rinse 1 cup of matta rice thoroughly and soak in water for 30 minutes. Drain and set aside.
- 2. Heat 2 tbsp of coconut oil in a heavy-bottomed pan. Add 1 tsp mustard seeds and allow them to splutter.
- 3. Add 1/2 tsp cumin seeds, 2 dried red chilies, and a pinch of asafoetida. Sauté for a few seconds until aromatic.
- 4. Add 2 finely chopped tomatoes and cook on medium heat until the tomatoes turn soft and mushy.
- 5. Stir in 1/4 tsp turmeric powder, 1 tsp red chili powder, 1/2 tsp coriander powder, and salt to taste. Mix well and cook for 1-2 minutes.
- 6. Add the soaked and drained matta rice to the tomato mixture. Stir well to coat the rice with the spices.
- 7. Pour in 2 1/2 cups of water and bring the mixture to a boil. Cover the pan with a lid, reduce the heat to low, and let it simmer for 25-30 minutes or until the rice is fully cooked.
- 8. Once the rice is cooked, fluff it gently with a fork. Garnish with 2 tbsp of freshly chopped coriander leaves and serve hot.
