Ingredients
- 1 Kg Lokwan Premium Wheat Atta 1 Kg
- 500 g Refined Flour
- 100 g Ajwain
- 200 ml Mustard Oil
- 200 g Dahi
- 500 g Capsicum Green
- 50 g Asafoetida Powder
- 1 pc (approx. 500 g to 800 g) Cabbage
- 100 g Coriander Leaves
- - Coriander Powder
- - Green Peas
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
Instructions
- 1. In a large mixing bowl, combine whole wheat flour, all-purpose flour, ajwain, and salt. Gradually add oil and mix until crumbly, then knead into a firm dough. Let it rest for 20 minutes.
- 2. Heat 1 tbsp oil in a pan and add hing. Stir in turmeric powder, red chili powder, and coriander powder, cooking for 30 seconds to bloom the spices.
- 3. Add green peas, diced capsicum, shredded cabbage, and chopped tomatoes to the pan. Cook over medium heat for 8-10 minutes until the vegetables are tender and well-coated in the spices.
- 4. Roll out the dough into small circles (about 3-4 inches in diameter) and fry them in hot oil until golden and puffed. Drain on paper towels.
- 5. Garnish the masala with fresh coriander leaves and serve alongside the crispy puris. Include a side of yogurt for dipping or a mild chutney, if desired.
