Ingredients
- 1 kg Basmati Rice
- 1 l Homogenised Toned Milk
- 100 g Almonds
- 750 g Pistachios
- 100 g Raisins
- - Green Cardamom Powder
- 500 g Sugar
Instructions
- 1. Rinse 1/4 cup of basmati rice thoroughly under running water until the water runs clear. Soak the rice in water for 20 minutes and drain.
- 2. In a heavy-bottomed pan, bring 1 liter of full-fat milk to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
- 3. Once the milk comes to a boil, reduce the heat to low and add the soaked and drained rice. Stir well to ensure the rice does not stick to the bottom.
- 4. Cook the rice in the milk on low heat, stirring frequently, until the rice is soft and the milk thickens. This should take about 25-30 minutes.
- 5. Add 1/4 cup of sugar to the kheer and stir until the sugar dissolves completely. Adjust the sweetness to your taste.
- 6. Add 1/4 tsp of cardamom powder and mix well. Continue to simmer for another 5 minutes to allow the flavors to blend.
- 7. Turn off the heat and add 2 tbsp of chopped nuts (like almonds, cashews, and pistachios) and 1 tbsp of raisins. Stir well.
- 8. Serve the kheer warm or chilled, garnished with additional nuts if desired.
