  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 50 g White Sesame Seeds
  • 500 g Suji
  • 500G Besan (Gram Flour)
  • 200 g Table Salt
  • 50 g Asafoetida Powder
  • - Chili Paste
  • 500 g Sugar
  • 100 g Yellow Mustard Seeds
  • 300 g Ginger Paste
  • 20 g Turmeric Powder
  • 500 Ml Champion Oil

Instructions

  1. 1. Prepare the batter by mixing 1 cup of besan (gram flour), 1 tablespoon of suji (semolina), 1 teaspoon of ginger paste, 1 teaspoon of green chili paste, 1/2 teaspoon of turmeric powder, and a pinch of asafoetida in a large mixing bowl.
  2. 2. Gradually add water (approximately 1 cup) while whisking to form a smooth, lump-free batter with a pouring consistency.
  3. 3. Add 1 teaspoon of fruit salt (eno) to the batter and mix gently. The batter will become frothy and light.
  4. 4. Grease a dhokla steamer plate or a flat dish with oil and pour the batter into it, ensuring it is spread evenly.
  5. 5. Steam the batter in a preheated steamer for 15-20 minutes on medium heat. To check if the dhokla is cooked, insert a toothpick; if it comes out clean, it’s ready.
  6. 6. Turn off the heat and let the dhokla cool for 5 minutes. Then, remove it from the steamer and cut it into square or diamond-shaped pieces.
  7. 7. Prepare the tempering by heating 1 tablespoon of oil in a small pan. Add 1 teaspoon of mustard seeds and let them splutter.
  8. 8. Add 1 teaspoon of sesame seeds, 2-3 slit green chilies, and a few curry leaves to the pan. Sauté for a few seconds.
  9. 9. Pour 1/2 cup of water into the pan and add 1 tablespoon of sugar and 1 tablespoon of lemon juice. Mix well and let it simmer for 2 minutes.
  10. 10. Pour the tempering mixture evenly over the dhokla pieces, ensuring they are well-coated.
  11. 11. Garnish the dhokla with freshly chopped coriander leaves and grated coconut (optional).
  12. 12. Serve the Khatta Dhokla warm with green chutney or tamarind chutney as a snack or breakfast dish.
