Indian Spiced Baked Grouper recipe

Ingredients

  • 10 g Fresh Thyme
  • 100 g Sambar Onion Peeled
  • 250 g Organically Grown Green Capsicum
  • 400 g Pastazara Finely Chopped Tomatoes
  • 200 g Ginger (Shunti)
  • 5 ltr Saffola Sunflower And Rice Bran Blended Cooking Oil - Free 1 L Pouch
  • 50 g Zoff Premium Indian Bay Leaf
  • 1 kg Simply Staples Mineral Rich Sea Salt

Instructions

  1. 1. Preheat the oven to 180°C (350°F).
  2. 2. Place the grouper in a flat casserole dish and set aside.
  3. 3. Heat 1/4 cup cooking oil in a pan over medium heat. Add 1 finely chopped onion and 1/4 cup diced green pepper, sauté until softened.
  4. 4. Add 2 lb chopped tomatoes, 1/2 cup ginger preserve, 1 tsp salt, 1/4 tsp thyme, and 1 bay leaf to the pan. Stir well and bring the mixture to a boil.
  5. 5. Spoon the tomato and spice mixture evenly over the grouper in the casserole dish.
  6. 6. Bake the dish in the preheated oven for 30 minutes or until the fish is cooked through and flakes easily with a fork. Avoid overcooking.
  7. 7. Remove the bay leaf before serving. Serve hot with steamed rice or Indian flatbread.
