- 200 ml Mustard Oil
- medium Chilli Green Long
- 500 g Tomato - Hybrid
- 200 g Dahi
- 500 g Sugar
- 100 g Coriander Leaves
- - Coriander Powder
- 100 g Curry Leaves
- 50g Everest Garam Masala
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat oil in a wide pan over medium heat. Add mustard seeds and let them splutter, then add curry leaves and green chili, sautéing for 30 seconds.
- 2. Add the chopped tomatoes to the pan and cook until they turn soft and mushy, about 5-7 minutes.
- 3. Lower the heat and stir in the yogurt, turmeric powder, red chili powder, coriander powder, garam masala, sugar, and salt. Mix well and cook for 2-3 minutes until the masala becomes rich and aromatic.
- 4. Gently add the idli pieces to the pan and toss them to coat evenly in the masala. Cook for 3-4 minutes, turning occasionally to ensure the idlis are lightly crisped and fully infused with the flavors.
