- 100 g Curry Leaves
- 100g Pronature Organic Cashew Nuts100g
- 500 g Poha
- 500G Madhur Sugar
- 200 g Table Salt
- 500 Ml Champion Oil
- 20 g Turmeric Powder
- - Red Chilli Powder
Instructions
- 1. Heat a large, heavy-bottomed pan on low flame. Dry roast 2 cups of thin poha (flattened rice) for 3-4 minutes until crisp. Stir continuously to avoid burning. Transfer to a large mixing bowl.
- 2. In the same pan, heat 2 tbsp of oil. Add 1/2 tsp mustard seeds and let them crackle.
- 3. Add 10-12 curry leaves and 2-3 finely chopped green chilies. Sauté for 1-2 minutes until aromatic.
- 4. Stir in 2 tbsp of roasted peanuts and 2 tbsp of roasted cashews. Sauté until they turn golden brown.
- 5. Add 1/4 tsp turmeric powder, 1/2 tsp red chili powder, 1/2 tsp sugar, and salt to taste. Mix well to combine the spices.
- 6. Reduce the flame to low and add the roasted poha back into the pan. Mix gently to coat the poha evenly with the spiced mixture.
- 7. Turn off the heat and let the chivda cool completely to room temperature. Once cooled, store it in an airtight container to retain its crispiness.
