Hearty Winter Vegetable And Beef Stew Recipe

Ingredients
- 10 g Fresh Thyme
- 14 g On1Y Basil Leaves
- 100 g Sambar Onion Peeled
- 500 g X 2 Organically Grown Potato Combo
- 500 g Carrot
- 200 g Green Peas (Peeled)
- 1pc Butternut Squash
- 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
- 1 Kg Kissan Tomato Paste
Instructions
- 1. Heat 2 tbsp of mustard oil in a large pot over medium heat and sauté 4 diced sambar onions until softened and fragrant.
- 2. Add 2 1/2 cups of water, 1/2 tsp of thyme, and 1/2 tsp of basil to the pot. Stir well, bring to a boil, then reduce the heat to low and let it simmer for 50 minutes, stirring occasionally.
- 3. Peel and chop 3 potatoes and 2 large carrots into bite-sized pieces. Add them to the pot along with 1 1/2 cups of peas. Stir and cook for an additional 15 minutes.
- 4. Stir in 1/2 cup of tomato paste and 2 cups of cubed winter squash. Continue cooking for another 10 minutes or until all the vegetables are tender and the flavors are well combined.
- 5. Taste and adjust the seasoning if needed. Serve the stew hot, garnished with fresh herbs if desired.
