Ingredients
- 100 g Coriander Leaves
- loose Ginger
- 1 kg Potato
- 250 g Spinach
- 500 G Peas/Matar (500Gm)
- 200 g Paneer
- 50G Green Chilies
- 200 g Table Salt
- 50 g Cumin Powder
- 50g Everest Garam Masala
- 100 g Cornflour
- 500 Ml Champion Oil
Instructions
- 1. Wash and finely chop 1 cup spinach (palak) and 1 cup coriander leaves (dhania).
- 2. Boil 2 medium potatoes (aloo) until tender, peel, and mash them in a large mixing bowl.
- 3. Blanch the chopped spinach and coriander leaves in hot water for 2 minutes, then drain and squeeze out excess water.
- 4. Add the blanched spinach and coriander to the mashed potatoes.
- 5. Finely chop 1 green chili (hari mirch) and 1-inch piece of ginger (adrak). Add them to the mixture.
- 6. Add 1/2 cup green peas (matar) (fresh or boiled) to the mixture.
- 7. Season with 1 tsp cumin powder (jeera powder), 1/2 tsp garam masala, 1/2 tsp chaat masala, and salt to taste.
- 8. Mix all the ingredients thoroughly until well combined.
- 9. Add 2 tbsp cornflour (makki ka atta) or breadcrumbs to bind the mixture.
- 10. Divide the mixture into equal portions and shape them into flat, round kebabs.
- 11. Heat 2-3 tbsp oil in a non-stick pan over medium heat.
- 12. Gently place the kebabs in the pan and shallow fry until golden brown on both sides (about 3-4 minutes per side).
- 13. Remove the kebabs from the pan and place them on a paper towel to absorb excess oil.
- 14. Serve hot with mint chutney or tamarind chutney.
