- 100 g Cooking Soda
- - Toned Milk
- 200 g Khoa
- 500 g Wheat Flour / Maida
- 500 g Sugar
- 100g Edible Rose Water
- Loose Cardamom
Instructions
- 1. Gather all the ingredients: 1 cup khoya (mawa), 2 tbsp all-purpose flour (maida), 1/4 tsp baking soda, 2-3 tbsp milk, 1 cup sugar, 1 cup water, 2-3 cardamom pods, and 1 tbsp rose water.
- 2. In a mixing bowl, crumble the khoya until it is smooth and free of lumps.
- 3. Add the all-purpose flour and baking soda to the crumbled khoya and mix well.
- 4. Gradually add milk, 1 tablespoon at a time, and knead the mixture into a soft, smooth dough. Avoid over-kneading.
- 5. Cover the dough and let it rest for 10-15 minutes.
- 6. Meanwhile, prepare the sugar syrup: In a saucepan, combine sugar, water, and crushed cardamom pods. Heat over medium flame until the sugar dissolves completely.
- 7. Bring the sugar syrup to a boil, then reduce the heat and let it simmer for 5-7 minutes until it slightly thickens. Add rose water and stir well. Turn off the heat and keep the syrup warm.
- 8. Divide the dough into small, equal-sized portions and roll them into smooth, crack-free balls (approximately 1 inch in diameter). Ensure there are no cracks to prevent them from breaking during frying.
- 9. Heat ghee or oil in a deep pan over low-medium heat. Test the temperature by dropping a small piece of dough; it should rise slowly without browning immediately.
- 10. Gently slide the dough balls into the hot ghee or oil, frying them in batches to avoid overcrowding.
- 11. Fry the balls on low heat, stirring gently, until they turn golden brown and evenly cooked. This should take about 7-8 minutes.
- 12. Remove the fried balls using a slotted spoon and drain excess oil by placing them on a paper towel.
- 13. While the balls are still warm, immerse them in the warm sugar syrup. Let them soak for at least 1-2 hours to absorb the syrup fully.
- 14. Serve the Gulab Jamuns warm or at room temperature, garnished with chopped nuts or a sprinkle of rose petals if desired.
