Ingredients

  • - Besan
  • - Dried Mixed Fruits
  • 100 Ml Gowardhan Ghee
  • 500 g Wheat Flour / Maida
  • 500 g Sugar
  • Pcs Saffron
  • 500 Ml Champion Oil
  • Loose Cardamom
  • 500 ml Water

Instructions

  1. 1. In a mixing bowl, combine 500 g of maida (wheat flour) and 50 g of besan (gram flour).
  2. 2. Gradually add 200 ml of melted ghee into the flour mixture, stirring continuously to avoid lumps.
  3. 3. Add water slowly, around 250 ml, to create a smooth batter with a flowing consistency.
  4. 4. Heat 1 liter of refined soybean oil in a deep pan or kadhai until it's hot.
  5. 5. Pour a small amount of the batter through a small round-holed ladle or bottle cap into the hot oil, allowing it to spread and fry until golden brown.
  6. 6. Repeat the process with the remaining batter, ensuring each Ghevar is cooked evenly.
  7. 7. In a separate pot, boil 500 g of sugar with 250 ml of water and a few drops of lemon juice to create a single-string consistency syrup.
  8. 8. Dip the fried Ghevar into the hot sugar syrup quickly, then remove and drain the excess syrup.
  9. 9. Garnish each Ghevar with a mix of cardamom powder, saffron threads, and dried mixed fruits.
  10. 10. Serve the Ghevar at room temperature, ideally with a sprinkle of additional dry fruit mix on top for extra flavor.
