Ingredients
- 100 G Cashews / Kaju 100 G
- 250 g Carrot
- - Toned Milk
- 100 Ml Gowardhan Ghee
- 100 g Almonds
- Pcs Saffron
- 500 g Sugar
- Loose Cardamom
Instructions
- 1. Wash and peel the carrots (Ooty ones) and grate them finely.
- 2. In a large heavy-bottomed pan or kadhai, heat 2-3 tablespoons of Govind Cow Ghee over medium heat.
- 3. Add the grated carrots to the pan and sauté for about 10-15 minutes until they become slightly soft.
- 4. Pour in the Amul Homogenised Toned Milk and cook the mixture, stirring occasionally, until the milk is absorbed by the carrots.
- 5. Add the Madhur Sugar and stir well, allowing it to dissolve and integrate with the carrot mix.
- 6. Stir in a pinch of Katdare Green Cardamom Powder and the soaked Good Life Saffron strands (soaked in a little warm milk for color and aroma) for flavor.
- 7. Continue cooking until the mixture thickens and begins to peel off the sides of the pan.
- 8. In a separate small pan, heat a tablespoon of Govind Cow Ghee and roast the Wonderland Foods Premium California Almonds and Premium Raw Cashews until golden brown.
- 9. Stir the roasted nuts into the halwa, mix well, and turn off the heat.
- 10. Serve the Gajar ka Halwa warm or refrigerate it for a few hours before serving, garnishing with additional nuts on top if desired.
