Ingredients

  • 100 g Coriander Leaves
  • loose Ginger
  • 500 g Chicken Whole
  • medium Chilli Green Long
  • 1 bunch Spring Onion
  • 1 pc (approx. 500 g to 800 g) Cabbage
  • 1 l Refined Soyabean Oil
  • 80 g Soya Sauce
  • 200 g Table Salt
  • 500 g Wheat Flour / Maida

Instructions

  1. 1. Start by cleaning and chopping the cabbage, chicken, green chillies, coriander leaves, ginger, and spring onions into fine pieces.
  2. 2. In a mixing bowl, add the chopped chicken along with cabbage, green chilies, coriander leaves, 25 g ginger garlic paste, chopped spring onions, and season with a pinch of Keya Table Salt, 1 tsp of eastern white pepper powder, and 1 tsp of nilon's soy sauce.
  3. 3. Mix the ingredients well until they form a cohesive filling for the momos.
  4. 4. In another bowl, prepare the dough by combining 500 g of samrat refined mp wheat flour with water and a pinch of salt, kneading it until smooth. Let the dough rest for 30 minutes.
  5. 5. After resting, divide the dough into small portions and roll each into thin circles, about 3 inches in diameter.
  6. 6. Place a tablespoon of the chicken filling in the center of each dough circle.
  7. 7. Fold the edges inwards, using your fingers to pinch and seal them together, forming dumplings with pleats.
  8. 8. Lightly grease a steamer plate with sunny soya fit refined soyabean oil and arrange the momos ensuring they don’t touch each other.
  9. 9. Steam the momos for about 12-15 minutes until the outer dough becomes translucent and the chicken is cooked through.
  10. 10. Meanwhile, prepare a quick dip by blending 500 g of tomatoes, 2 tbsp of sam's white cooking vinegar, and a few catch cloves till smooth.
  11. 11. Serve the hot chicken momos with your freshly made tomato dip or your preferred sauce.
