Ingredients
- 250 ml Lemon Juice Concentrate
- 200 ml Ghee
- 100 g Almonds
- Loose Cardamom
- 500 g Sugar
- 100 g Cornflour
Instructions
- 1. In a bowl, mix 250 ml of water with 125 g of corn flour to form a smooth paste without any lumps.
- 2. In a large non-stick pan, add 500 ml of Keya lemon juice concentrate and 500 g of Madhur sugar. Heat gently, ensuring the sugar dissolves completely.
- 3. Once the sugar has dissolved, add the corn flour paste, stirring continuously to avoid lumps from forming.
- 4. Gradually add 200 ml of Mother Dairy cow ghee into the mixture, a little at a time, while constantly stirring.
- 5. Continue to cook over medium heat until the mixture thickens and becomes glossy, pulling away from the sides of the pan.
- 6. Add a teaspoon of Katdare green cardamom powder and a handful of chopped almonds to the mixture, stirring well to combine.
- 7. Pour the halwa into a greased tray or mold, and smooth the top with a spatula.
- 8. Allow the halwa to cool and set for at least a couple of hours. Once set, cut it into squares or diamonds and serve.
