Ingredients
- 100 g Almonds
- 200 ml Ghee
- 500 g Wheat Flour / Maida
- 500 g Sugar
- Pcs Saffron
- Loose Cardamom
Instructions
- 1. Soak 20g of almonds in water for a few hours, then peel and blend them into a smooth paste.
- 2. In a bowl, mix 500g of fortified maida (refined flour) with a pinch of salt and 100g of ghee. Knead them into a smooth dough, adding water if necessary.
- 3. In another bowl, dissolve 200g of Madhur refined sugar in 200ml of water over medium heat to make a sugar syrup. Add 1g of Everest saffron and a pinch of ground cardamom for flavor.
- 4. Divide the dough into small balls and roll each ball into a flat puri. Spread a thin layer of almond paste and sprinkle little desiccated coconut flour on each puri.
- 5. Fold the puris twice to form triangle shapes. Seal the edges using a little water.
- 6. Heat ghee in a pan and deep fry each puri until they turn golden brown and crispy.
- 7. Dip the fried puris into the sugar syrup to coat them evenly and let them soak for a few minutes.
- 8. Once soaked, remove the puris and let them cool. Garnish with a few strands of saffron on top.
- 9. Serve the Badam Puri as a delicious dessert or snack.
