- 300 g Ginger Paste
- 200 ml Mustard Oil
- 100 g Badishep Big Premium
- 100 g Tej Patta
- 100 g Garlic
- 500 g Chicken Whole
- 20 g Cardamom Green

- 100 g Dalchini (Cassia )
- 100 g Curry Leaves
- 1 kg Basmati Rice
- 20 g Turmeric Powder
Instructions
- 1. Rinse the seeraga samba rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
- 2. Heat 2 tablespoons of refined oil and 1 tablespoon of ghee substitute in a large heavy-bottomed pan or pressure cooker over medium heat. Add fennel seeds, bay leaves, green cardamom pods, cloves, and cinnamon stick. Sauté until aromatic, about 1-2 minutes.
- 3. Add the slit green chilies, ginger paste, mint leaves, and curry leaves. Sauté for another 2-3 minutes until the raw aroma dissipates.
- 4. Add the chicken pieces to the pan and cook until they are lightly browned on the outside, about 5 minutes.
- 5. Sprinkle turmeric powder, red chili powder, and biriyani masala powder over the chicken. Mix well to coat the chicken evenly with the spices.
- 6. Add the soaked and drained seeraga samba rice to the pan and gently mix it with the chicken and spices, ensuring the rice is well-coated.
- 7. Pour in enough hot water to cook the rice and chicken (approximately 1.5 times the volume of rice). Stir gently and bring the mixture to a boil.
- 8. Reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is fully absorbed.
- 9. Turn off the heat and let the biriyani rest for 10 minutes. Fluff the rice gently with a fork to mix the layers.
