  • medium Chilli Green Long
  • loose Ginger
  • 500 g Chicken Whole
  • 500 g Tomato - Hybrid
  • 500 g Curd
  • - Red Chilli Powder
  • 1 l Refined Soyabean Oil
  • 200 g Table Salt
  • 50 g Cumin Powder
  • 45 g Garam Masala
  • - Coriander Powder
  • 20 g Turmeric Powder

Instructions

  1. 1. Gather all ingredients: 500g chicken, 4-5 green chillies, 1-inch ginger, 1 tomato, 1/2 cup curd, 1/2 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp coriander powder, 1/2 tsp cumin powder, 1/2 tsp garam masala, 2 tbsp oil, salt to taste, and fresh coriander leaves for garnish.
  2. 2. Wash the chicken thoroughly under running water and pat it dry with a clean kitchen towel. Cut it into medium-sized pieces and set aside.
  3. 3. Prepare the other ingredients: slit the green chillies lengthwise, finely chop the ginger, and dice the tomato. Keep them ready for use.
  4. 4. In a mixing bowl, combine the curd, turmeric powder, red chilli powder, coriander powder, cumin powder, and salt. Mix well to form a smooth marinade.
  5. 5. Add the chicken pieces to the marinade, ensuring each piece is well-coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to infuse.
  6. 6. Heat 2 tablespoons of oil in a deep pan or kadhai over medium heat. Once the oil is hot, add the chopped ginger and sauté for 30 seconds until aromatic.
  7. 7. Add the slit green chillies to the pan and sauté for another 30 seconds, ensuring they do not burn.
  8. 8. Add the marinated chicken to the pan and mix well. Cook for 5-6 minutes, stirring occasionally, until the chicken starts to change color and is partially cooked.
  9. 9. Add the diced tomato to the pan and mix well. Cover the pan and reduce the heat to low. Let the chicken cook for 15-20 minutes, stirring occasionally to prevent sticking, until the chicken is fully cooked and tender.
  10. 10. Once the chicken is cooked through, sprinkle garam masala over the dish and mix well. Cook for an additional 2 minutes to allow the flavors to meld.
  11. 11. Turn off the heat and garnish with freshly chopped coriander leaves.
