Ingredients
- 500 G Potato (500 Gm)
- 500 g Rice Flour
- 500 Ml Champion Oil
- 10G Red Chili Powder
- 20 g Turmeric Powder
- 100G Sur Black Salt
Instructions
- 1. Gather all ingredients: 3 medium-sized potatoes, 1/2 cup rice flour, 1/4 cup cornstarch, 1 tsp red chili powder (optional), 1/2 tsp turmeric powder, 1/2 tsp black salt (sanchal), 1/2 tsp regular salt, 1/2 cup water, and oil for frying.
- 2. Wash and peel the potatoes thoroughly. Ensure no traces of skin remain as Jain cuisine avoids root vegetables with skins.
- 3. Cut the potatoes into thin, even strips resembling fries. Make sure they are uniform in size for even cooking.
- 4. Soak the potato strips in a bowl of cold water for 20 minutes to remove excess starch. This helps in achieving crispiness.
- 5. Drain the water and pat dry the potato strips completely using a clean kitchen towel or paper towels. Ensure they are moisture-free.
- 6. In a mixing bowl, combine rice flour, cornstarch, red chili powder (optional), turmeric powder, black salt, and regular salt. Mix well.
- 7. Gradually add water to the dry mixture while stirring continuously to form a smooth, lump-free batter. The batter should be thick enough to coat the fries.
- 8. Heat oil in a deep frying pan or kadhai over medium heat. Ensure the oil is hot but not smoking.
- 9. Dip each potato strip into the batter, ensuring it is evenly coated on all sides. Shake off any excess batter.
- 10. Carefully place the coated potato strips into the hot oil. Fry in small batches to avoid overcrowding the pan.
- 11. Fry the strips until they turn golden brown and crispy, turning occasionally for even cooking. This should take about 4-5 minutes per batch.
- 12. Remove the fries using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.
- 13. Repeat the frying process for the remaining potato strips.
- 14. Once all fries are fried, let them cool slightly before serving.
- 15. Serve the Jain-style vegetarian crispy fries hot with a side of mint chutney or ketchup (ensure it is Jain-friendly).
